Enough about the weather!
Dinner tonight was scrambled egg and corned beef on rolls! Quick and simple!
Yet I've been busy in the kitchen all evening...
Every Friday in the office we take turns between 5 of us to do an 11am tea, supplying usually basic sweets and savouries from Pick & Pay or Woolies. Whenever it's my turn my colleagues can be spotted licking their chops for days in anticipation for the inevitable OTT banquet I usually lay out! No matter how poor I claim to be, it's always a feast.
Tomorrow it's my turn again and the food on offer will be somewhat different to the usual shop-bought crap; I'm making it myself; well some of it anyway! My dear wife has kindly offered to make a chocolate cake, which she is busy with as I write this. It's kind of become her speciality. I'm not particularly fond of cake in general, but as far as chocolate cake goes she does a good cake!
What I've been slaving away at all night is making savoury pancakes! The mix is made and setting for an hour, as per the recipe (yes don't look so shocked - I do use recipes, usually simple things like pancakes, white sauce, and cooking rice, which I still can't get right!)
I've concocted 2 different fillings, as follows:
- Savoury Chicken consisting of chicken breast pan fried in pepper, herbs & lemon; blended finely with onions fried in a sun-dried marula balsamic vinegar, paprika, and a blob of mayonnaise. Oh yes, and a splash of Nando's Extra Hot sauce!
- Spinach & feta, thick, salty and creamy! Made with fresh spinach and quality feta, lightly cooked with milk, flour, salt & pepper.
But first I think a cold shower will be absolute bliss!
