Rabbit food again!

Oh man I'm so over lettuce leaves, cucumber and baby/plum/cherry tomatoes! Seriously!
I'm enjoying doing the healthy thing and for the most part my lunch salads are great, especially when I've taken the time to cook up some spicy chicken and croutons for the week. But for the lettuce (etc) leaves especially - I'm done with that now! Any more and I'm going to spout rabbit ears, teeth like Naas Botha, and a pair of plump tomatoes dangling between my legs!

Today's salad - lettuce, cucumber, tomatoes, feta, chopped olives, raisins, mixed seeds, tuna and lemon juice.

Solution: need to get more creative with lunches, while keeping it affordable, healthy and simple to slap together in the 10 minutes time allows for making lunches during the morning rush to get ready and off to work on time!
And don't chirp about making it the night before - I have a life outside of the salad bowl which involves doing other stuff in the evenings like band practice, gym, editing photo's, downloading stuff, vegging in front of the TV, etc. Basically, I can't be bovverd, and I prefer my salad fresh.

That said, maybe it's time to start trying out combo's involving vegetables, which will need to be cooked. Hint hint... I'm open to suggestions. Bear in mind the conditions: simple to make, affordable, and healthy (meaning in this case LOW CARB, so no pasta, rice, potatoes, fruit, etc). Post a comment at the end of this rant.

I can see this becoming a food blog again, with pictures and descriptions of previously unheard of (incredibly delicious) concoctions which seem to be famous for grossing people out, such as my Bovril on toast with mayo, cheese, avo, cream cheese, etc. I can't just do plain Bovril. Well I can, but why be boring? A dollop of Bovril in Two-Minute-Noodles - oooh that's so good!

The picture above I Instagrammed to Facebook earlier with a short rant about the same; being gatvol of the rabbit food aspect of the salads. Somebody suggested  trying a version of a mini quiche type thing made in a cup. Another friend suggested a similar thing that can be made in the microwave on the spot. I'm going to try it this week with a couple of pre-cooked & mixed fillings. It sounds like a great idea, and low carb which is great.

Another idea I'll try is to substitute the bovine fodder with vegetables, such as crispy roasted vegetables like courgettes and sweet potatoes, or cauliflower rice. It all just seems like a lot of work.

You see this is the problem - healthy eating involves a lot of thinking, time and effort, and of course it's vastly more expensive, unless I'm doing it wrong! It was so nice on the weekend, I felt peckish so I popped two slices of seed bread in the toaster and spread real butter on both, with cheese & peanut butter on one and Bovril and mayo on the other. It was so quick and easy to make and oh so damn delicious! Yet I felt bloated and guilty afterwards! Why can't that stuff be healthy, or why can't healthy eating be so simple? I can't think of anything carb-free that one can substitute for toast, and that sucks!
