Fish Bake a-la rice-pap!

Outdid myself this evening with a brilliant oven baked fish dish. It was a delicious custom-designed meal comprised of a normal pack of frozen hake fillets baked in the oven for 40 minutes on 180 degrees celcius in a sauce made as follows:
Cut up 3 carrots and 4 baby marrows (courgettes) and lightly fried them in butter, adding a whoosh of thyme and a dash of blue cheese dressing.
To this add a fish bake packet sauce (ja I know that's cheating - I never claimed to be a pro!), a good sprinkling of Ina Paarman's fish seasoning, a hearty squirt of lemon juice, about half a pint of milk, and a big handful of grated cheddar cheese.

Allow to bubble & boil gently for about 2 minutes, stirring continuously so the cheese doesn't stick to the bottom of the cauldron.

Then pour the sauce & vegetables over the fish in a baking tray, and whack in the oven to cook...

While the fish is cooking I boiled up 2 gem squash, which when cooked I spooned out and mashed with a little margerine, some sugar and a sprinkling of cinnamon.
I also over-cooked some rice, that came out like brown-bottomed pap again.

Apart from the rice it was a lovely meal, whipped up simply and effortlessly in very little time. Once it was in the oven and the rice & squash on the cook I did a good half hour of Facebook!

I'm sorry folks but I don't feel like talking about anything else now! I'm quite knackered and my couch is beckoning to me!

  1. fuuny that i did the same didn't feel like talking today i might feel better tommorrow thank for the recipe it look yummy ill try it this weekend let ya know how it goes
